&lt;p&gt;One of my quick and easy fall-back snack/meals is always ‘avo hash.’  Actually, its not like hash at all, more of a salsa, or salad.  But, it’s still a jumble of flavors and texture.  &lt;/p&gt;
&lt;p&gt;Super Easy Avo Hash:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;&lt;span&gt;Avocado&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;tomato&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;onion&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;cilantro/parsley&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;lime juice (or lemon or vinegar, any acid really)&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;spices (salt, pepper, chili powder, cayenne, cumin, garlic)&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;/div&gt;

&lt;p&gt;I cooked a serving of quinoa just seasoning it with salt.  Then, in a separate pan, heated some olive oil, added onions and green peppers and some of my favorite spices: chili powder, cayenne pepper, garlic, ground coriander seed, a touch of cumin and salt and pepper.  When the veggies were soft, I added the chunked tofu and heated it through.  &lt;/p&gt;
&lt;p&gt;I topped the quinoa with the sauté and serve!  It was bright and spicy and the tofu was about what I expected, firm and mild in flavor.  It was super easy to cook with and I’ll definitely be factoring this into my home cooking.  Now to find ways to spice it up…&lt;/p&gt;

&lt;p&gt;I bought a few boxed soups recently and found them to be rather bland.  :(  So, I figured I’d add a few bits to try to give the flavor a little more, depth.  I very loosely based my soup off this recipe: &lt;a href="http://www.whatwouldcathyeat.com/2011/08/roasted-corn-and-potato-chowder/" target="_blank"&gt;Roasted Corn and Potato Chowder&lt;/a&gt;.&lt;/p&gt;
&lt;p&gt;I started with a box of vegetarian, low sodium &lt;a href="http://www.imaginefoods.com/content/light-sodium-organic-creamy-harvest-corn-soup" target="_blank"&gt;Creamy Harvest Corn Soup&lt;/a&gt;.  In a stock pot, I first sautéed garlic and onions in some olive oil.  After they were nice and soft, I added the soup as well as a few quickly boiled potatoes, almond milk, tabasco, lemon juice, A1 Sauce, a bay leaf, paprika, thyme, salt and pepper.&lt;/p&gt;
&lt;p&gt;While the soup boiled then simmered, in a separate pan I heated more olive oil, added sunflower seeds, turbino sugar, coarse salt, chili powder, cumin and garlic powder.  I heated the mixture until the seeds were toasted, about 6 minutes on med-high heat.&lt;/p&gt;
&lt;p&gt;After removing the bay leaf, I plated the soup and added a few toasted sunflower seeds on top.&lt;/p&gt;
