So yesterday, I decided to pick up tofu for the first time from the grocery. I picked out a firm Cilantro Tofu having no idea how to cook with it. I decided to keep it simple and make spicy sauté with my cilantro tofu and some of my favorite new ‘grain,’ quinoa.
I cooked a serving of quinoa just seasoning it with salt. Then, in a separate pan, heated some olive oil, added onions and green peppers and some of my favorite spices: chili powder, cayenne pepper, garlic, ground coriander seed, a touch of cumin and salt and pepper. When the veggies were soft, I added the chunked tofu and heated it through.
I topped the quinoa with the sauté and serve! It was bright and spicy and the tofu was about what I expected, firm and mild in flavor. It was super easy to cook with and I’ll definitely be factoring this into my home cooking. Now to find ways to spice it up…
